Kimchi Jjigae*

If Talking about Korean food ... I would think of " Kimchi Jjigae " first !!
What about you??
So it was my second times cooking Korean food again
for family ..
Too bad I didnt have enough time to make kimchi myself :(
But nevermind !!! I will make it one day
" Ammie's Kimchi "
Okay enough talking lets see the ingredients

Ingredients
Kimchi
Kimchi broth
Soft tofu
pork belly/bacon or any part of pork ( u can use tuna if u want )
Big red chili
Spring onion
Water

HOW TO : Kimchi Jjigae...


*Prepare all this stuffs before u get start *



#1# Thats Kimchi I bought from Korean Town..( opposite Ampang Point ) RM 10 for 1 box.


#2# Pork Belly.... Nice !! love it so much..bought from husband's friend !! Cougar :)

#3# Soft Tofu. Cut it into smaller piece... not so thin u dunwan to crack it all when its boiling later


#4#Ganish with spring onion and big red chili later !


Pour some water into the pot ... maybe 2-3 cups

Take kimchi out from the box and add in the pot


Pour the kimchi broth into the pot as well...for more tasty !!!

Okay ...let it boil for 7-10 mins

And after that add in the pork belly...

Also add in Soft tofu...do not stir...

Now its boiling... u can garnish it at this step.. and turn off the stove

Som Tum Poo Maa or Spicy papaya salad with salted flower crab....well without the crab also can make papaya salad ...but of course it will be more delicious and yummy with it hehehhe okay lets see how to make salted flower crab at home ....
Things u might need : Flower crabs , Fish Sauce , Sugar ..thats all !!! so easy !!!!
1. Dear God ... i 'm so so sorry that i have to kill this crabs :( it was alive !!! k-i-l-l- the crabs
wash it with water...cut into half

2.We dun need those things in NO.7...once everything is ready so put it to the small, flat Box with lid.add fish sauce( not so much just make sure it can cover all the crabs ) and white sugar
1-2 Tbsp.


3.cover it up and chill in the fridge...

1 day later.... now we have salted crab ... we re ready to make som tum :) ( spicy papaya salad )

Ingredients

Green papaya
Carrot
Garlic
Red Chili
Tomato
Long bean
Lime
Fish sauce
Palm sugar
Salted flower crab



for today i will only make this for my lunch :)


Thats the fish sauce , palm sugar , salted flower crab


veggies/fruits peeler


Starting from the papaya ...cut the top part away..peel it with the peeler


prepare 1 bowl of ice and place the sliced papaya and carrot on the ice .chill in the fridge

pound chili , garlic together


Squeeze some lime juice


Add some fish sauce

add alittle bit of palm sugar / white sugar


Add sliced tomatoes ( take out some seeds )

Normally after pound chili , garlic the next step is follow by the salted crab BUT my pounder is too small so i skip it until almost the last step then only i put crab....

After that , take out the sliced papaya , carrot from the fridge and put on the pounder

Oh i almost forgot this long bean !!!

And then u re done !!!

Now u can try your spicy som tum poo ma @home

Hoyy Laii Pad Nam prik Phao or fired soft-shell clams with homemade chili paste or in malaysia they called " stired fried LALA "
For this dish I will teach you how to clean the lala also .
smelly , dirty mud , some shell not even open!!!???!!!

Ingredients


Soft-shell clams ( wash 5-6 times at least )
Homemade chili paste ( u can see how to make it from my previous post )
Sweet basil
Kaffir leaf
Garlic ( chopped )
Fish sauce
Sugar
Cooking Oil
Some water
Salt

#1# How To : Clean the mud and open the shell
For the clams that already open abit u can use ur hand and open it more so later u can wash it easily.and for those clams that not even open, u have to use the small knife to open it.Gentle and slowly at this step.I dont want u to hurt yourself later


Rinse with water for 5-6 times or until it looks clean.... then soak it in the salt water for at least 5 mins. so the clams will split out the dirty mud .

Rinse 2-3 time with water again . and take a look at those clean clams..
Now I can happily cook and yes happily eat it !!!



#2# How To : Hoyy Laii Pad Nam Prik Phao

Heat up the wok , add some oil .


Once the oil is hot. Add chopped garlic into the wok..fry it with the oil till fragrant.
Then put Clams in ...


Add Homemade red chili paste 2-3 tbsp.
Mix well...

Add 1 tbsp. of sugar


Add some fish sauce.mix well ( if its too dry u can add some water in )

put in sweet basil and kaffir leaf .mix one last time and off the stove.

Serve :)
