Palm Sugar
Oyster Sauce
Fish Sauce
How To : Pad Thai
after we wash it then u can cut it into smaller piece maybe 1 cm. and leave it dry
There is many types of Tofu... but I only buy this type . its not too soft and it is not to hard . Just nice .. u will have to fry it later
okay so u got tofu ... wash it and then cut it to little square shape. leave it DRY before fry if u dunwan to get burn by the cooking oil.
pour 1 cup of cooking oil into the hot pan then wait until the oil is hot and ready to fry...
Now u deep fry tofu that prepared earlier.. wait till it became yellow brown colour then u can off the stove
put the deep fried tofu on the kitchen tissue. let the tissue suck the oil and u also can wipe the oil away too..
Now the most important step..i guess !!... cuz pad thai will be tasty and yummy or not it depends on the Sauce !!!... if the sauce nice then ur pad thai will be nice also if not nice then.......too bad !!
so in this photo u need to prepare : White Sugar,Palm Sugar,Tamarine Juice,Oyster Sauce,Fish Sauce....
Boil it for 7-10 mins until the Palm sugar dissove.. once its done leave it cool..
So now u got the sauce :) taste it and make sure the taste will be sour first then sweet and the last taste will be salty :) no worry if it very tasty cuz later when u cook pad thai the taste will be just nice . but if u dun like u can add a little bit of water...
Put pad thai noodle in the boiling water 3-5 mins
NOT TOO SOFT cuz later u have to fry it again
BUT ALSO NOT TOO HARD later can not bite hehehe
so thats the yummy pad thai noodle :)
Prepare 1 bowl and put the pad thai noodle in. just for 1 serve
Add some oil and mix it together
and this step u have to put 3 (or more) fresh prawns , 1tbsp. deep fried tofu,1-2 tsp. chilies powder,1tbsp. crushed nut,1tbsp. dried shrimp,1 fullhand fesh bean sprout,1-2 pinch chives.and yes 1 egg.... why have to prepare everything in 1 bowl?? becuz its faster this way and u wont forget to put this or that and this dish u need to fry it fast !!
and the last thing : 4-5 tbsp. of PAD THAI SAUCE !!!!
Heat up the wok and pour about 3 tbps of cooking oil. Allow it to get heated, then break one egg into it.
Scramble the egg, not too cook
Throw in the prawns an stir fry together with the egg until the prawn is 70% cooked.
Pour in the rest of the ingrediant that was prepared earlier in the bowl and stir fry it
Mix throughly and quickly to ensure all the ingredient is cooked properly
The noodle will look brownish and that means the sauce has mixed well. Start transffering to a plate...
Add the sugar, chilie flake and crushed nuts at the side of the plate. Add one wegdge of lime, to squeeze when serve
Here is the finishing touch, garnish with fresh chives
If you want to wrap the pad thai with egg, beat an egg in a bowl
Pour the egg into a oiled non stick frying pan, with low heat.
When the egg is cooked, lay the egg on a big flat plate and pour the fried pad thai into the middle of the plate, and wrap the pad thai by folding each corner of the egg. Use another plate on top and turn it upside down. Cut an 'X' in the middle of egg and unfold slightly.
Some people like to mix in fresh bean sprout to the pad thai, adding a crunchiness to the dish
My husband in love with my pad thai :) and i hope u guys like it too.
This dish is very easy to prepare and cook and does not take too long.
The ingredients are easily available in all major supermarket, I got mine from Jusco Bukit Tinggi supermarket and it should not be a problem to anyone else. The ingredients are fresh and affordable for anyone.
